Meet The Chef
My Name is Brendan. I have been a Chef for 17 years and I love my job!
I spent 8 years working at Leeds Castle and am now honoured to be a nominated catering supplier for one of their venues, Battel Hall.
I fell in love with smoking meats. I enjoy the challenge of controlling a live fire low and slow. The complexity of flavour and melt in your mouth texture gets me excited every time.
But my real passion is to give an enjoyable, unique and comfortable dining experience to my clients - bespoke menus are available upon request and I even do the washing up afterwards!
